Crockin Cookin!

Yeah! Cici FINALLY broke and bought a crock pot! There was a sale going on at Costco (it closes March 9th for any of you who are interested) and we got costco coupons for $10 off. Hence, I got this lovely mini crockpot dipper, large spoon, and a large 5-6 person crock pot with cookbook. BOOYA.

I tried my first meal which was a lame barbecue sauce with chicken on Sunday, and although the smell was TO DIE FOR, the meal was so below average. BLAH! I will actually try a real recipe next time. Please send good ones as I am in need!

I am one step closer to being a stepford wife with this classic item: the crock pot.

You need to get crock pot bags! The bags make clean up SO easy. I make salsa chicken with John's salsa. It is SSOOO YUMMY!!!

I have the SAME CROCKPOT! I LOVE IT! Although I must admit I don't cook in it enough, in fact, I don't cook much AT ALL even withOUT a crockpot! But I was so excited that I saw that you got this one that I HAVE to share with you my EASY roast recipe! It's seriously the BEST for sunday and it tastes SUPERB!

Rump Roast
1 can cream of mushroom soup
1 can Beef Gravy
1 pkg. dry onion soup mix
2 Tbl viniger
1 Tbl soy sauce
1 Tbl Worschestire sauce
1/4 tsp salt, pepper, garlic salt

Just throw it all on the crockpot and it makes it's own gravy for mashed potatoes and everything! MUST TRY! Let me know what you think! Oh and I think the 8 hour setting makes it the most moist and yummy!

I was going to say... do 3 frozen chicken breasts and a jar of salsa. Put on low for 8 hours.

Shred the salsa and serve with taco fixings. YUMO!

Ciara--I have some great crock pot recipes, and I use the crock pot at least 1-2 times a week, so we should get together and share. I am so jealous about your little one! I can only dream!

Oh! I absolutely LOVE crockpot cooking...espscially when I was working full-time. HEre's my favorite:

Stringy Beef

1 beef tri-tip or chuck roast
1 can diced green chiles
1 diced onion
1 diced green pepper
2 cubes beef boullion
1 tsp oregano
1 tsp cumin
1/4 c. water

Cook on low all day-about 8 hours until it falls apart. Serve in tortillas with any toppings you like. yum!

One of the things that I do for my crock pot recipes is going to sound weird. For the first half of the recipe I leave out all the ingredients except the meat and some sort of diet soda- ginger ale, sprite, or diet coke depending on the kind of meat. Then for the rest of the recipe I dump out the soda and put in what the recipe originally called for. The meat ends up turning out very tender and delicious. My favorite variations on this are the diet coke pot roast and sprite chicken.

This is another one of my favorites:

Pulled Pork Sandwiches

1 tbsp. vegetable oil
3 1/2- to 4-pound boneless pork shoulder roast, netted or tied
1 can (10 1/2 ounces) Campbell's® Condensed French Onion Soup
1 cup ketchup
1/4 cup cider vinegar
3 tbsp. packed brown sugar
12 round sandwich rolls or hamburger rolls, split

All you have to do is sear the meat in a skillet, dump all the ingredients on low for 8-9 hours and serve on the rolls. Mac loved it.

Another yummy one my mom does, is throws in a jar of spaghetti sauce with a few chicken breasts. Then shred and serve over pasta. Yummy.

Yeah for crock pots, they are the only way to actually have a home cooked meal when you work full-time. I agree about the whole not speaking Spanish in the Dominican, we are actually going back leaving today for a couple days on a random trip and i am hoping this time I will really get motivated to become fluent. Hank and I are always talking about you guys hoping you are doing well so it will be fun to stay in touch!

UGH, I just wrote youa LONG comment, and then there was an error. I'm going to have to write down those recipes in your comments...they all look delish! There is a book you need! (Well, I need it, so maybe you might need it too) it's called "Fix it and Forget about it lightly"...I think...and it's just FILLED with yummy looking LIGHT crock pot recipes! Miss You!
